Objective: The objective of the material is to develop the student’s ability to analyze and apply wine pairing principles based on the type of food, its preparation, texture, and flavor, thereby strengthening professional judgment in the creation of balanced and sophisticated menus. Context of Use: This content is suitable for undergraduate-level Gastronomy courses, particularly subjects such as “Food and Wine Harmony” or “Enology I” and “Enology II,” as well as practical workshops on tasting and menu design focused on the diner's experience. Tool or Format Used: The set of readings was created in digital format (.docx), structured as academic material for use in both in-person and virtual Gastronomy programs. It was developed through a documentary review conducted via Google Scholar and the Gemini tool, aimed at identifying reliable and up-to-date sources on wine pairing. Specialized enology books, academic articles, and recognized tasting guides were consulted, analyzed, synthesized, and adapted into a didactic language while maintaining technical and culinary rigor for educational use. Added Value: The distinctive value of this material lies in its systematic and categorized approach to wine pairing, the integration of theoretical foundations with practical examples, and the inclusion of updated bibliographic references, making it a rigorous, innovative, and adaptable educational tool for diverse teaching contexts."
